home-cookin-hunter-022017I always find myself standing in a grocery store aisle, gazing up at the massive wall of marinades, bewildered over which one to pick. I mean, let’s be honest, picking out a new marinade is almost like Russian roulette! You really don’t know how it’s going to taste, much less how it is going to cook into your food!

Most of the time I usually end up reaching for old faithful, which is generally a really strong, seemingly single note of flavor marinade. I know it works and I don’t want to screw up my
dinner. Which in my case can be a pretty sensitive subject, considering most of the meat that I cook happens to be wild game.

As a hunter and a cook, I love to use any means I can to enhance the flavor and tenderness of the wild game that I cook, which is generally a process of steps that I personally take to ensure that the meat I plate is tender and full of flavor.

I spoke with Amy Zehr, owner of Tastefully Done Marinade, for about half an hour, just getting some background on Tastefully Done Marinade and what the product was about. She explained that her marinade was a secret family recipe designed by hunters for hunters, specifically for wild game. This really piqued my interest because hunting and wild game is what I do! Also, this marinade wasn’t just developed for a specific animal. It is applicable not only for whitetail, but also bear, moose, antelope, mule deer, elk, and the list goes on and on.
So, I received the two jars of the marinade and immediately noticed just how unique it was. This marinade uses actual fat! You may be wondering: why the fat? The right kind of fat can be used for all sorts of cooking applications to apply moisture and major flavor to your food.

tastefully-done-combo-022017What this marinade has done is apply this same concept in a jar full of awesome flavors. So, as you cook the meat, the fat, which has all these delicious flavors such as brown sugar, sweet cream and apple cider vinegar will continue to baste over the meat as you cook! Also, this marinade tenderizes your meat the longer you keep it marinating.

Most people use different processes to tenderize their meat, but by using this marinade, you no longer have to worry about those steps because it takes care of all of that for you. This allows you to use the rough cuts of the animal as opposed to just the back strap.  It also helps with the
removal of any wild pungent flavors that you may find in bear, antelope, mule deer or that big rutty whitetail.
The process is simple. The instructions call for ¼-inch thick steaks a.k.a minute steaks. What this does is it allows the marinade to easily penetrate the meat. A jar of Tastefully Done will marinate 3 to 4 pounds of meat. Just remove the lid and take out the desired amount, depending on how much meat you would like to cook. Place the marinade in the microwave for about 30 seconds or melt it in a sauce pan on the stove (microwave is easier and faster). The idea is to heat the marinade just enough to allow the fat to melt, creating a smooth and creamy texture, which is aided by stirring the marinade.

From there just make sure the marinade is at room temperature and pour it over the meat inside a freezer bag or plastic container. Once you’ve poured in the marinade, give it a shake to make sure the marinade is dispersed and throw that bad boy in the fridge for a minimum of two days.

After two days, typically the meat has accepted all of the flavor it is going to accept. The longer you leave it in the fridge, the better the tenderizing process will be. Now that you have marinated the meat and are preparing to cook, you will notice that the fat has congealed over the meat. This is good because now, as you cook, the fat will melt all over the meat, filling it with more delicious flavor.

venison-on-grillIf you cut your steaks ¼-inch thick per the instructions, pre-heat your skillet on a medium high heat and cook for 1 to 1 1/2 minutes per side for a perfect medium rare steak. Do not cook your ¼-inch thick steak any longer than 2 1/2 minutes per side.  As you cook your steak, you’ll begin to see a beautiful glaze form over the meat, which is the brown sugar and sweet cream doing what they were always meant to do. Your finished product is a sweet savory steak, with
a hearty peppery finish!
All in all, the Zehr family in my opinion hit a massive home-run with their secret family recipe! It was such a pleasure getting to know Amy and being able to be introduced to such a delicious marinade. I can honestly say that I don’t know if I have ever had a marinade as good as Tastefully Done Marinade. Bravo Zehr family!
