Seminar will cover preparing wild game and fresh fish for smoking and slow cooking with an emphasis on Venison and Salmon, but covering many other foods as well.

Additional techniques and recipes will discuss the benefits of smoking game and also include the preparation of sausage, jerky, curing hams/bacon and cold smoking.
